Sweet and Sour Chicken with Mushrooms and Asparagus

Around here we are big fans of Chinese food! We make it about two or three times a week. I find it to be the simplest to cook and there are so many options that no one every gets tired of it! I love finding new recipes and even modifying old ones to create great meals that everyone in the home will enjoy! One of my absolute favorites is sweet and sour chicken. It is such a classic. The breaded chicken, the veggies, the sauce. Oh the sauce. So delicious. It is also one meal that I can get the girls to eat so that is a huge bonus. Here is a great recipe that is so easy to make and tastes just as delicious as take out!

Sweet and Sour Chicken with Mushrooms and Asparagus

3 or 4 pieces of boneless, skinless chicken breasts
8 ounces (2 cups) asparagus
2 cups mushrooms
For coating:
¼ cup cornstarch
1 egg, beaten
¼ teaspoon garlic powder
¼ teaspoon ginger
¼ teaspoon onion

For sauce:
¼ cup rice vinegar
½ cup sugar
2 ½ Tbsp ketchup
½ Tbsp soy sauce
½ teaspoon garlic powder

Preheat oven to 350°
Cut chicken into 1 inch pieces. Salt and pepper.
In a bowl mix cornstarch and seasonings with egg. Add chicken and mix.
In skillet, heat oil, once hot place chicken in. Cook chicken for 2-3 minutes until sides are golden brown.
Place chicken in baking dish.
Mix rice vinegar, sugar, ketchup, soy sauce, and garlic powder.
Pour over chicken.
Add sliced mushrooms and asparagus.
Cook for 40 minutes, stirring occasionally.
Add sesame seeds. Serve over rice.
