If you follow me on Instagram then earlier this week you may have seen a picture of one of my lunches. I am beginning to make a real attempt at eating better and becoming more conscience of what I put into my body. It can be a real struggle for me especially when I think about pizza, cheeseburgers, and tacos most of my days. But I know how important it is to eat well not only for myself but for my children.
One of my favorite types of foods is Mediterranean. I mean I wish smaller towns would appreciate more diverse foods and provide me some amazing takeout. However that is not the case so many times I have to create great tasting diverse foods at home. I have been obsessed with burrito bowls so I decided to create a quick and easy Mediterranean bowl.
Quick and Easy Mediterranean Bowl
Ingredients
3 tbsp quinoa, cooked
1/4 cup chickpeas, rinsed and drained
kalamata olives
2 tbsp hummus
2 tbsp tzatziki
1 small cucumber
1/2 cup grape tomatoes
1/4 cup of red onions
1/4 cup feta cheese
olive oil
1 tsp white vinegar
Instructions
- Wash cucumber and tomatoes and chop. Chop red onion. Place all in bowl. Mix in a drizzle of olive oil, 1 tsp of vinegar, feta cheese, and salt to taste.
- Assemble bowl. Add chickpeas that have been rinsed and drained, cooked quinoa, kalamata olives, and vegetable mix. On top add hummus and tzatziki.
I want to add that I made the tzatziki using this recipe.
Also do not be afraid to add more or less of something! I am in love with olives so I added tons of those into the bowl. I find any kind of meal that you make in a bowl you truly cannot screw it up!
This is so quick and easy that I was able to enjoy it a couple days this week! Always a win when you can make enough to last! Hope you enjoy this as much as I did!
